Ingredients
  

  • 1 cup ricotta cheese
  • 2 tbsp powdered sugar optional, for sweetness
  • 1/2 tsp vanilla extract
  • 1/4 cup shelled pistachios finely chopped
  • 2-3 tbsp honey plus more for drizzling

Method
 

  1. In a mixing bowl, combine ricotta, powdered sugar, and vanilla. Stir until smooth and creamy.
  2. Scoop small spoonfuls of ricotta mixture and shape into bite-sized rounds. Place on a parchment-lined tray.
  3. Sprinkle each ricotta bite with chopped pistachios.
  4. Drizzle generously with honey.
  5. Chill for 15–20 minutes before serving for best texture.

Notes

For extra flavor, add a pinch of cinnamon or orange zest to the ricotta mixture. Store in the fridge and enjoy within 2 days.
