Ingredients
  

Chicken
  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Sweet Potatoes
  • 3 large sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp cinnamon
Bowls
  • 2 cups quinoa cooked
  • 4 cups baby spinach
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved

Method
 

  1. Preheat oven to 425°F and line baking sheets with parchment paper.
  2. Season sweet potatoes and roast for 25–30 minutes.
  3. Season chicken and roast for 20–25 minutes until cooked through.
  4. Prepare quinoa according to package directions.
  5. Slice roasted chicken.
  6. Assemble bowls with quinoa, greens, sweet potatoes, chicken, and toppings.
  7. Add dressing if desired and serve.
