Ingredients
  

Filling
  • 4 jalapeños roasted and sliced
  • 4 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 6 slices bacon cooked crispy and chopped
  • 1 tsp garlic powder
  • 1 tbsp fresh chives chopped
  • 0.25 tsp black pepper
Sandwich Assembly
  • 8 slices sourdough bread
  • 4 tbsp unsalted butter softened
  • 1 tbsp mayonnaise
  • 0.5 cup extra cheddar cheese for layering

Method
 

  1. Roast jalapeños under a broiler or on a grill until blistered and charred. Cover briefly, peel skins, and slice.
  2. In a bowl, mix cream cheese, cheddar, mozzarella, bacon, garlic powder, chives, and black pepper.
  3. Fold roasted jalapeños into the cheese mixture until evenly combined.
  4. Spread butter and mayonnaise on one side of each bread slice.
  5. Place filling between bread slices with extra cheddar cheese layered inside.
  6. Heat skillet over medium-low heat and grill sandwiches until golden brown and crispy on both sides.
  7. Cook until cheese is fully melted and bread is crisp.
  8. Slice sandwiches diagonally and serve immediately while hot.

Notes

For milder heat, remove jalapeño seeds before slicing. Freshly shredded cheese melts best and creates the creamiest texture.
