- Preheat oven to 425°F. Line baking sheet with parchment paper.
- Slice zucchini and toss with olive oil in a bowl.
- Season with garlic powder, salt, pepper, and sprinkle Parmesan on top.
- Arrange in single layer on baking sheet and roast 12–15 minutes, flipping halfway.
- Garnish with parsley and serve warm.
