Ingredients
  

Salad
  • 6 cups kale chopped
  • 1 cup red cabbage shredded
  • 1 cup green cabbage shredded
  • 1 cup carrots shredded
  • 0.5 cup roasted peanuts
  • 3 green onions sliced
  • 1 tbsp sesame seeds
Peanut Dressing
  • 0.25 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp ginger grated
  • 1 garlic clove minced
  • 2-4 tbsp warm water to thin dressing

Method
 

  1. Remove kale stems and chop leaves into bite sized pieces.
  2. Massage kale with hands for 1-2 minutes until slightly softened.
  3. Add cabbage, carrots, and green onions to the bowl.
  4. Whisk together peanut butter, soy sauce, rice vinegar, honey, lime juice, ginger, and garlic.
  5. Add warm water gradually until dressing is smooth and pourable.
  6. Pour dressing over salad and toss until evenly coated.
  7. Top with roasted peanuts and sesame seeds.
  8. Serve immediately or chill slightly before serving.

Notes

Add grilled chicken or tofu for a heartier meal.
