Ingredients
  

Potatoes
  • 2 pounds baby potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Dressing
  • 0.33 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove minced

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with oil and seasonings, then roast 30–35 minutes.
