Ingredients
  

Roasted Strawberries
  • 2 cups fresh strawberries halved
  • 1 tbsp honey
  • 1 tsp olive oil
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
Whipped Ricotta
  • 1 cup ricotta cheese
  • 2 tbsp heavy cream
  • 1 tbsp powdered sugar optional
  • 1 pinch salt
Assembly
  • 4 slices crusty bread toasted
  • honey for drizzling
  • mint leaves for garnish
  • crushed pistachios optional

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toss strawberries with honey, olive oil, vanilla, and lemon zest.
  3. Roast for 20–25 minutes until soft and caramelized.
  4. Whip ricotta, cream, sugar, and salt until smooth and fluffy.
  5. Toast bread slices until golden.
  6. Spread whipped ricotta on toast and top with roasted strawberries.
  7. Drizzle honey and garnish before serving.
