Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, pepper, and smoked paprika.
- Arrange slices in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until golden and tender.
- Top warm rounds with crumbled feta.
- Drizzle with honey and sprinkle with thyme leaves. Add nuts if desired.
- Serve warm or at room temperature.
Notes
For extra crunch, broil the rounds for 1–2 minutes at the end of roasting.
