Ingredients
  

Roasted Sweet Potatoes
  • 2 large sweet potatoes sliced into ½-inch rounds
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1 tsp smoked paprika optional
Toppings
  • 0.5 cup feta cheese crumbled
  • 2 tbsp honey warm for drizzling
  • 1 tsp fresh thyme leaves or rosemary
  • 1 tbsp toasted walnuts or pecans optional for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, pepper, and smoked paprika.
  3. Arrange slices in a single layer on the baking sheet.
  4. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
  5. Top warm rounds with crumbled feta.
  6. Drizzle with honey and sprinkle with thyme leaves. Add nuts if desired.
  7. Serve warm or at room temperature.

Notes

For extra crunch, broil the rounds for 1–2 minutes at the end of roasting.
