Ingredients
  

Soup Base
  • 2 cups white beans cooked or canned
  • 1 garlic bulb roasted
  • 2 tbsp olive oil
  • 1 onion chopped
  • 1 tsp rosemary fresh
  • 3 cups vegetable broth
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and roast garlic bulb wrapped in foil for 30–35 minutes.
  2. Sauté chopped onion in olive oil until soft and translucent.
  3. Add rosemary and cook briefly until fragrant.
  4. Stir in white beans, roasted garlic, and vegetable broth.
  5. Simmer for 15–20 minutes.
  6. Blend partially for desired texture.
  7. Season with salt and pepper and serve warm.

Notes

For extra creaminess, blend fully or add a splash of plant-based cream.
