Ingredients
  

Pistachio Cake
  • 1.75 cups all-purpose flour
  • 1 cup shelled pistachios finely ground
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 0.75 cup whole milk
Blackberry Frosting
  • 2 cups blackberries
  • 6 oz cream cheese softened
  • 3-4 cups powdered sugar

Equipment

Method
 

  1. Prepare blackberry reduction and cool completely.
  2. Preheat oven to 350°F (175°C) and prepare cake pans.
  3. Mix dry ingredients including ground pistachios.
  4. Cream butter and sugar, then add eggs and vanilla.
  5. Alternate adding dry ingredients and milk.
  6. Bake until a toothpick comes out clean.
  7. Beat frosting ingredients until smooth.
  8. Assemble, frost, and garnish cake.

Notes

For best flavor, use unsalted pistachios and fully cooled blackberry reduction.
