  • 2 cups long-grain white rice
  • 2.5 cups chicken broth
  • 1.5 cups salsa verde
  • 1 lb chicken breasts boneless, skinless
  • 1 cup Monterey Jack cheese shredded
  • 1 cup cheddar cheese shredded
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 2 tbsp olive oil
  • 0.25 cup cilantro chopped
  • 1 lime juiced

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Sauté onion in olive oil until soft, then add garlic.
  3. Mix rice, broth, salsa verde, and spices in a bowl.
  4. Spread mixture in baking dish and place chicken on top.
  5. Cover with foil and bake 40 minutes.
  6. Remove foil, add cheese, and bake another 15–20 minutes.
  7. Rest, garnish with cilantro and lime, then serve.

Notes

Add vegetables like corn or beans for variation. Adjust spice level to taste.
