Ingredients
  

Vegetables
  • 2 large onions thinly sliced
  • 8 oz mushrooms sliced
  • 4 cups fresh spinach
Seasoning & Aromatics
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp thyme optional

Method
 

  1. Caramelize onions in olive oil and butter for 15–20 minutes until golden.
  2. Add mushrooms and cook until browned and moisture evaporates.
  3. Stir in garlic and thyme; sauté briefly.
  4. Add spinach and cook until wilted.
  5. Season with salt, pepper, and optional lemon.

Notes

For extra flavor, add a splash of balsamic vinegar while sautéing mushrooms.
