Ingredients
  

Fries
  • 4 russet potatoes cut into fries
  • 2 tbsp olive oil
  • salt and pepper to taste
Gravy
  • 250 g breakfast sausage crumbled
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 0.5 cup chicken broth
Toppings
  • 4 eggs
  • 1 cup cheese curds
  • 2 tbsp chives chopped

Method
 

  1. Preheat oven to 425°F and bake seasoned fries for 30–35 minutes.
  2. Cook sausage in a skillet until browned and set aside.
  3. Make gravy using butter, flour, milk, and broth, then add sausage.
  4. Scramble eggs until soft and fluffy.
  5. Layer fries, cheese curds, gravy, and eggs.
  6. Garnish with chives and serve hot.

Notes

For best results, assemble just before serving to keep fries crispy.
