Toasts
  • 1 French baguette sliced into rounds
  • 2 tbsp olive oil divided
  • 2 tbsp unsalted butter
  • 16 oz cremini mushrooms sliced
  • 2 garlic cloves minced
  • 1 tsp fresh thyme
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
Goat Cheese Spread
  • 4 oz goat cheese softened
  • 1 tbsp heavy cream
  • 1 tbsp fresh parsley chopped
  • 1 tbsp balsamic glaze optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  3. Bake 8–10 minutes, flipping halfway, until golden and crisp.
  4. Heat butter and remaining olive oil in a skillet over medium heat.
  5. Cook mushrooms for 8–10 minutes until browned and caramelized.
  6. Add garlic, thyme, salt, and pepper. Cook 1–2 minutes more.
  7. Mix goat cheese with heavy cream until smooth.
  8. Spread goat cheese mixture over toasted baguette slices.
  9. Top with warm mushroom mixture and garnish with parsley and balsamic glaze.
  10. Serve immediately while warm and crispy.

Notes

For extra flavor, drizzle with truffle oil or add caramelized onions before serving.
