- Preheat oven to 350°F (175°C). Grease a muffin tin or silicone mold.
- Cook sausage in a skillet until browned. Drain and cool slightly.
- In a bowl, whisk eggs, milk, salt, and pepper until smooth.
- Stir in sausage, cheese, and green onions.
- Divide mixture evenly among muffin cups, filling 3/4 full.
- Bake 20–22 minutes until set and golden. Cool slightly before serving.
Notes
These freeze and reheat beautifully. Try swapping sausage for bacon or adding diced veggies for extra nutrition.
