  • 0.5 cup cheese shredded
  • 0.25 cup cream

Method
 

  1. Preheat oven and bake sweet potatoes until tender.
  2. Sauté onion and garlic in olive oil.
  3. Add mushrooms and cook until golden.
  4. Stir in spinach and cook until wilted.
  5. Mix in cream and seasoning.
  6. Slice baked potatoes and fill with mixture.
  7. Top with cheese and bake until melted.
