  • 2 sweet potatoes peeled and cubed
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 can chickpeas drained
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp cumin
  • 2 cups spinach
  • 1 avocado sliced
Dressing
  • 3 tbsp tahini
  • 2 tbsp lemon juice

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season and roast sweet potatoes for 25–30 minutes.
  3. Cook quinoa until fluffy.

  6. Assemble bowls and drizzle with dressing.
