Ingredients
  

Scallion Oil
  • 6-8 scallions (green onions) white and green parts separated
  • 0.5 cup neutral oil such as canola or peanut oil
Noodles and Sauce
  • 8 oz wheat noodles or spaghetti
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce optional
  • 1 tsp sugar
  • 0.5 tsp salt
  • 0.5 tsp sesame oil optional

Equipment

  • Wok or skillet
  • Pot for noodles
  • Strainer

Method
 

  1. Heat oil in a wok over medium-low heat. Add white parts of scallions and fry until golden brown, then add green parts; cook until fragrant and crisp.
  2. Remove scallions and reserve oil. Mix soy sauces, sugar, and salt in a bowl to form the sauce.
  3. Cook noodles according to package instructions. Drain and toss with scallion oil.
  4. Add soy sauce mixture and toss to coat evenly. Garnish with crispy scallions and drizzle of sesame oil.

Notes

Keep the heat low to avoid burning scallions. Fry extra — they make a great topping for rice and soups.
