Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup milk whole milk or buttermilk
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 tbsp melted butter plus more for cooking
Optional Add-ins
  • 0.25 cup mini chocolate chips or blueberries optional
  • powdered sugar or maple syrup for serving

Method
 

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk milk, egg, vanilla, and melted butter.
  3. Combine wet and dry ingredients, stirring until just mixed.
  4. Heat a nonstick skillet over medium-low and melt a little butter.
  5. Pour the batter into the pan and cook until bubbles form, then gently scramble the pancake into bite-sized pieces.
  6. Continue tossing until golden and fluffy on all sides.
  7. Serve warm with syrup, powdered sugar, or your favorite toppings.

Notes

For fluffiest results, use fresh baking powder and low heat.
