Ingredients
  

Fried Rice Base
  • 3 cups cooked jasmine rice chilled
  • 8 oz shrimp peeled and chopped
  • 6 oz lump crab meat shells removed
  • 2 eggs beaten
  • 1 cup peas and carrots frozen
  • 0.5 cup red bell pepper diced
  • 3 green onions sliced
  • 3 cloves garlic minced
  • 3 tbsp cooking oil
  • 3 tbsp soy sauce
  • 1 tsp sesame oil

Equipment

  • Wok or large skillet
  • Spatula
  • Mixing bowls

Method
 

  1. Scramble eggs in a hot oiled wok until just set; remove and set aside.
  2. Cook shrimp briefly until pink; remove from pan.
  3. Sauté garlic and green onion whites until fragrant.
  4. Add vegetables and stir-fry until crisp-tender.
  5. Add rice, sauces, eggs, shrimp, and crab. Toss gently.
  6. Finish with sesame oil and green onion tops; serve hot.

Notes

Use chilled rice for best texture and avoid over-stirring to keep crab intact.
