- Cook and shred the chicken if not already prepared.
- In a large bowl combine napa cabbage, red cabbage, carrots, and snap peas.
- Add shredded chicken, mandarin oranges, and green onions.
- Whisk together orange juice, rice vinegar, soy sauce, honey, sesame oil, ginger, and garlic to make the dressing.
- Pour dressing over the salad and toss gently to coat.
- Top with toasted almonds and sesame seeds before serving.
Notes
Store dressing separately for meal prep and add crunchy toppings just before serving.
