Ingredients
  

Salad
  • 2 cups cooked shredded chicken
  • 3 cups napa cabbage thinly sliced
  • 1 cup red cabbage shredded
  • 1 cup carrots julienned
  • 1 cup mandarin oranges segments
  • 0.5 cup green onions sliced
  • 0.5 cup sliced almonds toasted
  • 2 tbsp sesame seeds toasted
Dressing
  • 0.25 cup orange juice fresh
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger grated
  • 1 clove garlic minced

Method
 

  1. Cook and shred the chicken if not already prepared.
  2. In a large bowl combine napa cabbage, red cabbage, carrots, and snap peas.
  3. Add shredded chicken, mandarin oranges, and green onions.
  4. Whisk together orange juice, rice vinegar, soy sauce, honey, sesame oil, ginger, and garlic to make the dressing.
  5. Pour dressing over the salad and toss gently to coat.
  6. Top with toasted almonds and sesame seeds before serving.

Notes

Store dressing separately for meal prep and add crunchy toppings just before serving.
