Ingredients
  

Baked Potatoes
  • 4 russet potatoes large
  • 1 tbsp olive oil
  • salt to taste
Filling
  • 1 lb ground lamb or beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots chopped
  • 2 cloves garlic minced
  • 0.5 cup peas frozen
  • 2 tbsp tomato paste
  • 1 cup beef broth
Mashed Topping
  • 2 tbsp butter
  • 0.25 cup milk

Equipment

  • Baking sheet
  • Large skillet
  • Mixing bowl
  • Potato masher

Method
 

  1. Bake potatoes at 400°F until tender.
  2. Cook onion, carrots, and garlic in olive oil.
  3. Brown ground meat and season.
  4. Add tomato paste and broth, simmer until thick.
  5. Scoop potato flesh and mash with butter and milk.
  6. Fill potato shells with meat mixture.
  7. Top with mashed potatoes.
  8. Bake again until golden.

Notes

Can be made ahead and reheated. Freezer friendly.
