Ingredients
  

Salad
  • 3 Persian cucumbers finely diced
  • 3 tomatoes finely diced
  • 0.5 red onion finely diced
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried mint
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

Method
 

  1. Finely dice cucumbers, tomatoes, and onion and place in a bowl.
  2. Whisk together lemon juice, olive oil, dried mint, salt, and pepper.
  3. Pour dressing over vegetables and toss gently to combine.
  4. Let sit 10 minutes before serving for best flavor.
