Ingredients
  

Shrimp
  • 1 lb raw shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp chili powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.5 lime juiced
Pineapple Salsa
  • 1 cup pineapple diced
  • 0.25 cup red onion diced
  • 1 tomato diced
  • 2 tbsp cilantro chopped
  • 1 lime juiced
  • salt to taste
Rice Base
  • 2 cups cooked rice jasmine or basmati

Equipment

Method
 

  1. Cook rice according to package instructions. Fluff with fork and set aside.
  2. Mix all pineapple salsa ingredients and chill while preparing shrimp.
  3. Season shrimp with oil, paprika, cumin, garlic powder, chili powder, salt, pepper, and lime juice.
  4. Cook shrimp in a skillet for 2–3 minutes per side until pink and charred.
  5. Assemble bowls with rice, shrimp, pineapple salsa, avocado, and cilantro garnish.

Notes

For extra flavor, grill shrimp on an outdoor grill and serve with fresh lime wedges.
