Method
- Season shrimp with 1 tablespoon Cajun seasoning and a pinch of salt.
- Heat oil in skillet and sear shrimp 1–2 minutes per side. Remove and set aside.
- Add butter, then sauté onion, bell pepper, and garlic until soft.
- Stir in rice and toast for 1–2 minutes.
- Add broth, tomato paste, remaining seasoning, salt, and pepper.
- Cover and simmer 15–18 minutes until rice is cooked.
- Return shrimp to skillet and cook 3–4 minutes.
- Garnish with parsley and serve with lemon wedges.
