Ingredients
  

Main Ingredients
  • 1 lb shrimp peeled and deveined
  • 1.5 cups long-grain white rice
  • 1 red bell pepper diced
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 2 tbsp Cajun seasoning
  • 2.5 cups chicken broth
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tbsp butter
  • salt and pepper to taste
  • parsley for garnish
  • lemon wedges for serving

Equipment

  • Large skillet
  • Cutting board
  • Chef’s knife

Method
 

  1. Season shrimp with 1 tablespoon Cajun seasoning and a pinch of salt.
  2. Heat oil in skillet and sear shrimp 1–2 minutes per side. Remove and set aside.
  3. Add butter, then sauté onion, bell pepper, and garlic until soft.
  4. Stir in rice and toast for 1–2 minutes.
  5. Add broth, tomato paste, remaining seasoning, salt, and pepper.
  6. Cover and simmer 15–18 minutes until rice is cooked.
  7. Return shrimp to skillet and cook 3–4 minutes.
  8. Garnish with parsley and serve with lemon wedges.

Adjust seasoning to your spice preference.
