  • 2 lbs boneless chicken thighs or breasts
  • 0.5 cup brown sugar light or dark
  • 4 cloves garlic minced
  • 0.25 cup soy sauce
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 0.5 tsp black pepper
  • 1 tbsp cornstarch optional for thickening
  • 1 tbsp water for slurry
  • parsley or green onions for garnish

Method
 

  1. Pat chicken dry and place into slow cooker.
  2. In a bowl, whisk together brown sugar, garlic, soy sauce, ketchup, vinegar, and pepper.
  3. Pour sauce over chicken and mix to coat evenly.
  4. Cover and cook on low 5–6 hours or high 2.5–3 hours until tender.
  5. Remove chicken and thicken sauce with cornstarch slurry if desired.
  6. Return chicken to sauce and coat well before serving.
  7. Garnish with parsley or green onions and serve warm.

Notes

For richer flavor, add a teaspoon of Worcestershire sauce or sesame oil.
