Ingredients
  

Chicken Bolognese Sauce
  • 1.75 lbs ground or shredded chicken
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 28 oz crushed tomatoes
  • 6 oz tomato paste
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 bay leaf
Pasta
  • 16 oz pasta of choice
  • fresh basil & Parmesan for serving

Equipment

  • Slow cooker
  • Cutting board
  • Knife
  • Large pot for pasta

Method
 

  1. Chop onion, garlic, carrots, and celery. Optional: sauté in olive oil for 3–5 minutes.
  2. Add chicken, vegetables, crushed tomatoes, tomato paste, broth, and seasonings to slow cooker.
  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Shred chicken if using whole breasts or thighs and stir back into sauce.
  5. Cook pasta separately or stir dry pasta into slow cooker 20–30 minutes before serving with extra broth.
  6. Taste and adjust seasonings, then serve with basil and Parmesan.

Notes

You can freeze the sauce for up to 3 months. Add red pepper flakes for heat.
