Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 cup chicken broth low sodium
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 small onion sliced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika

Equipment

  • Slow cooker
  • Measuring cups

Method
 

  1. Grease the slow cooker lightly with olive oil or nonstick spray.
  2. Layer sliced onions on the bottom of the slow cooker.
  3. Place chicken breasts on top of onions in a single layer.
  4. Season chicken evenly with salt, pepper, Italian seasoning, and paprika.
  5. Add minced garlic over the chicken.
  6. Pour chicken broth around the chicken.
  7. Drizzle olive oil on top, cover, and cook on LOW for 3–4 hours or HIGH for 1.5–2 hours.
  8. Remove chicken, rest briefly, then slice or shred and serve with juices.

Notes

Avoid overcooking to keep chicken tender and juicy.
