Ingredients
  

Soup Base
  • 1.5 lbs boneless skinless chicken breasts
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 1.5 lbs tomatillos husked
  • 2 poblano peppers chopped
  • 1 jalapeño optional
  • 6 cups chicken broth
  • 2 cans white hominy drained

Equipment

  • Slow cooker
  • Cutting board
  • Knife
  • Tongs

Method
 

  1. Add chicken breasts to the slow cooker.
  2. Top with onion, garlic, tomatillos, peppers, spices, and broth.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Remove chicken, shred, and return to slow cooker.
  5. Stir in hominy and cook 30 minutes more.
  6. Finish with lime juice and cilantro before serving.
