Method
- Season chuck roast generously on all sides.
- Sear roast in hot oil until browned.
- Transfer roast to slow cooker.
- Add vegetables around roast.
- Mix broth, tomato paste, Worcestershire, and herbs.
- Pour mixture over roast.
- Cook on LOW 8–9 hours or HIGH 4–5 hours.
Notes
For thicker gravy, stir in cornstarch slurry at the end.
