  • 3-4 lb chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 onion sliced
  • 4 carrots chunked

Method
 

  1. Season chuck roast generously on all sides.
  2. Sear roast in hot oil until browned.
  3. Transfer roast to slow cooker.
  4. Add vegetables around roast.
  5. Mix broth, tomato paste, Worcestershire, and herbs.
  6. Pour mixture over roast.
  7. Cook on LOW 8–9 hours or HIGH 4–5 hours.

Notes

For thicker gravy, stir in cornstarch slurry at the end.
