Slow Cooker French Onion Beef Pot Roast

Ingredients
  

Pot Roast
  • 3-4 lb beef chuck roast
  • 3 yellow onions thinly sliced
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1.5 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce optional
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme or 4 sprigs fresh
  • 1 bay leaf
Gravy Thickener
  • 2 tbsp cornstarch
  • 2 tbsp water cold

Method
 

  1. Sauté onions in butter over medium heat until soft and golden.
  2. Season the chuck roast with salt and pepper.
  3. Optional: Sear the roast for 2–3 minutes per side for extra flavor.
  4. Place onions into the bottom of the slow cooker.
  5. Add the beef roast on top of the onions.
  6. Whisk together beef broth, Worcestershire, soy sauce, Dijon, garlic, thyme, and bay leaf. Pour over the beef.
  7. Cook on LOW for 8–10 hours or HIGH for 4–5 hours until tender.
  8. Remove the roast, shred or slice, and return it to the slow cooker.
  9. Mix cornstarch and water to make slurry; add to slow cooker and cook 10–15 minutes until thickened.
  10. Serve warm with onions and gravy.

Notes

For the richest flavor, caramelize the onions well before adding to the slow cooker.
