Main
  • 6 chicken thighs bone-in
  • 4 potatoes chopped
  • 4 cloves garlic minced
  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 1 lemon zest
  • 1 tbsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup chicken broth
  • 0.5 cup Kalamata olives
  • 0.5 cup feta cheese crumbled
  • 2 tbsp parsley chopped

Method
 

  1. Place potatoes in slow cooker.
  2. Mix marinade ingredients and coat chicken.
  3. Layer chicken over potatoes.
  4. Add broth and cook on low 6-7 hours.
  5. Add olives near the end.
  6. Top with feta and parsley before serving.

Notes

Use fresh lemon juice for best flavor.
