Method
- Rinse and soak pinto beans overnight; drain before use.
- Brown ground beef in a skillet with olive oil until cooked through. Drain fat.
- Add onions and garlic, sautéing until fragrant.
- Transfer beef mixture to slow cooker. Add beans, green chiles, tomatoes, broth, and spices.
- Cook on LOW for 7–8 hours or HIGH for 4–5 hours until beans are tender.
- Taste and adjust seasoning. Serve warm with garnishes.
Notes
For extra creaminess, stir in sour cream or shredded cheese before serving.
