Method
- Dice vegetables, slice mushrooms, and mince garlic. Season chicken with salt and pepper.
- Optional: Brown chicken thighs in skillet 2–3 minutes per side for extra flavor.
- Place carrots, celery, onion, mushrooms, and garlic in the slow cooker. Top with chicken.
- Pour in white wine and chicken broth. Add thyme, bay leaves, and seasonings.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Optional: Mix flour or cornstarch with water to form slurry and stir in 15–20 minutes before serving. Add cream if desired.
- Remove bay leaves. Garnish with parsley and serve with crusty bread or rice.
Notes
Vegetables like peas or spinach can be added at the end to preserve texture.
