Ingredients
  

Smash Burgers
  • 1.5 lbs ground beef (80/20)
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp butter or oil
  • 4 slices cheddar cheese
  • 4 brioche buns toasted
Baconnaise Sauce
  • 6 slices bacon
  • 0.5 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp lemon juice
  • 0.25 tsp smoked paprika

Equipment

  • Cast iron skillet
  • Spatula or burger press

Method
 

  1. Cook bacon until crispy; reserve 1 tablespoon bacon fat.
  2. Blend bacon, mayo, mustard, garlic, lemon juice, and paprika into a smooth baconnaise sauce.
  3. Form beef into 8 loose balls; heat skillet until smoking.
  4. Smash burgers flat, season, and cook 2 minutes per side with cheese added after flipping.
  5. Toast buns, spread baconnaise, and assemble with toppings and bacon.

Notes

For extra crispiness, use a cast-iron griddle and avoid overcrowding the pan.
