- Drain and rinse chickpeas, then pat dry.
- Mash chickpeas in a bowl, leaving some texture.
- Add avocado and mash together until creamy.
- Mix in pickles, pickle juice, lemon juice, garlic, dill, salt, and pepper.
- Taste and adjust seasoning as needed.
- Spread mixture onto bread with lettuce and optional toppings.
- Assemble sandwich, slice, and serve immediately.
Notes
Best eaten fresh to avoid avocado browning. Can be meal prepped for 1–2 days.
