Ingredients
  

Sandwich Filling
  • 1 can chickpeas drained and rinsed
  • 1 avocado ripe
  • 0.25 cup dill pickles finely chopped
  • 2 tbsp red onion finely diced
  • 2 tbsp fresh dill chopped
  • 2 tbsp mayonnaise or vegan mayo
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 0.5 tsp garlic powder
  • salt and pepper to taste

  • 4 slices bread

Method
 

  1. Mash chickpeas in a bowl until mostly broken down but slightly chunky.
  2. Add avocado and mash together until creamy.
  3. Mix in pickles, onion, dill, mayonnaise, mustard, lemon juice, garlic powder, salt, and pepper.
  4. Stir until fully combined and adjust seasoning to taste.
  5. Spread filling onto bread slices and assemble sandwiches.
  6. Slice and serve immediately.

Notes

Add extra lemon juice to prevent avocado browning if storing.
