Sausage Sweet Potato Stir Fry
  • 1 lb smoked sausage sliced
  • 2 sweet potatoes peeled and diced small
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper
  • fresh parsley optional

Method
 

  1. Cook sweet potatoes in olive oil until tender and caramelized.
  2. Brown smoked sausage slices on both sides.
  3. Add onion, bell pepper, and garlic, cooking until softened.
  4. Season with paprika, salt, and pepper.
  5. Stir together and cook 1–2 minutes to combine flavors.
  6. Garnish with parsley and serve warm.

Notes

Small sweet potato cubes cook faster and caramelize more evenly.
