Method
- Season chicken with salt, pepper, paprika, and garlic powder.
- Sear chicken in olive oil until golden brown on both sides, about 4–5 minutes per side. Remove and set aside.
- Cook bacon in the same skillet until crispy. Remove bacon pieces and reserve 1 tablespoon of bacon fat.
- Add butter and sauté mushrooms until golden. Add garlic and cook 30 seconds.
- Pour in chicken broth to deglaze, then add cream, Parmesan, onion powder, and red pepper flakes. Simmer until thickened.
- Stir in spinach until wilted. Return chicken and bacon to the skillet, spoon sauce over chicken, and simmer until cooked through.
- Garnish with parsley and serve warm.
Notes
To thicken the sauce, simmer uncovered for a few minutes longer.
