Ingredients
  

Chicken
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 2 tbsp olive oil
Creamed Spinach & Sauce
  • 6 slices bacon chopped
  • 2 tbsp butter
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 2 cups baby spinach fresh
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 0.5 tsp onion powder
  • 0.25 tsp crushed red pepper flakes optional
  • Fresh parsley for garnish

Equipment

Method
 

  1. Season chicken with salt, pepper, paprika, and garlic powder.
  2. Sear chicken in olive oil until golden brown on both sides, about 4–5 minutes per side. Remove and set aside.
  3. Cook bacon in the same skillet until crispy. Remove bacon pieces and reserve 1 tablespoon of bacon fat.
  4. Add butter and sauté mushrooms until golden. Add garlic and cook 30 seconds.
  5. Pour in chicken broth to deglaze, then add cream, Parmesan, onion powder, and red pepper flakes. Simmer until thickened.
  6. Stir in spinach until wilted. Return chicken and bacon to the skillet, spoon sauce over chicken, and simmer until cooked through.
  7. Garnish with parsley and serve warm.

Notes

To thicken the sauce, simmer uncovered for a few minutes longer.
