- Preheat oven to 375°F (190°C) and grease a large baking dish.
- Season pork chops with salt, pepper, and smoked paprika, then sear in olive oil until golden on both sides. Set aside.
- In the same pan, melt butter and sauté onions until soft. Add garlic and cook for 30 seconds.
- Stir in flour, then gradually whisk in chicken broth and cream. Season with thyme, garlic powder, and onion powder.
- Layer half the potatoes in the baking dish, pour half the sauce, and sprinkle with cheese. Add pork chops, remaining potatoes, sauce, and top with cheese.
- Cover with foil and bake 45 minutes, then uncover and bake another 25–30 minutes until golden and bubbly.
- Let rest 10 minutes, garnish with parsley, and serve.

Letting the casserole rest helps the sauce thicken and flavors meld.
