  • 4 boneless pork chops 1 inch thick
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 2 lbs Yukon Gold potatoes thinly sliced
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded mozzarella
  • 0.5 tsp thyme dried
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. Season pork chops with salt, pepper, and smoked paprika, then sear in olive oil until golden on both sides. Set aside.
  3. In the same pan, melt butter and sauté onions until soft. Add garlic and cook for 30 seconds.
  4. Stir in flour, then gradually whisk in chicken broth and cream. Season with thyme, garlic powder, and onion powder.
  5. Layer half the potatoes in the baking dish, pour half the sauce, and sprinkle with cheese. Add pork chops, remaining potatoes, sauce, and top with cheese.
  6. Cover with foil and bake 45 minutes, then uncover and bake another 25–30 minutes until golden and bubbly.
  7. Let rest 10 minutes, garnish with parsley, and serve.

Letting the casserole rest helps the sauce thicken and flavors meld.
