Method
- Slice each date lengthwise and remove the pit if not already pitted.
- Fill each date with 1 teaspoon peanut butter.
- Sprinkle chopped peanuts inside each date.
- Melt chocolate chips with coconut oil in microwave until smooth.
- Dip each stuffed date halfway (or fully) into melted chocolate. Place on parchment-lined tray.
- Optional: sprinkle with sea salt or extra peanuts.
- Refrigerate 15–20 minutes until chocolate hardens. Serve chilled or room temp.
Notes
Use high-quality Medjool dates for best results. Store in the fridge for a week or freeze for up to 2 months.
