- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, pudding mix, baking powder, baking soda, and salt.
- Cream butter and sugars until light and fluffy.
- Add eggs and vanilla extract, mixing until smooth.
- Gradually mix in dry ingredients until just combined.
- Fold in pistachios and white chocolate chips.
- Scoop dough onto baking sheets, spacing 2 inches apart.
- Bake 10–12 minutes. Cool before serving.
