Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1.5 cups pecans chopped and toasted

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream butter and sugars until light and fluffy.
  4. Add egg, egg yolk, and vanilla extract; mix until smooth.
  5. Gradually add dry ingredients and mix just until combined.
  6. Fold in toasted pecans evenly.
  7. Scoop dough onto baking sheets, spacing 2 inches apart.
  8. Bake for 11–13 minutes until edges are lightly golden.
  9. Cool on baking sheet briefly, then transfer to wire rack.

Notes

Do not overbake to maintain a soft and chewy texture.
