- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking powder, baking soda, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Beat in egg, lemon zest, lemon juice, and vanilla.
- Gradually mix in dry ingredients until a soft dough forms.
- Chill dough for 20 minutes.
- Roll dough balls in powdered sugar and place on baking sheets.
- Bake 10–12 minutes until edges are set.
- Cool on wire racks before serving.
Notes
For extra lemon flavor, add an additional teaspoon of zest to the dough.
