Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 1 egg large
  • 1 tbsp lemon zest fresh
  • 2 tbsp lemon juice fresh
  • 1 tsp vanilla extract
Coating
  • 0.5 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking powder, baking soda, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy. Beat in egg, lemon zest, lemon juice, and vanilla.
  4. Gradually mix in dry ingredients until a soft dough forms.
  5. Chill dough for 20 minutes.
  6. Roll dough balls in powdered sugar and place on baking sheets.
  7. Bake 10–12 minutes until edges are set.
  8. Cool on wire racks before serving.

Notes

For extra lemon flavor, add an additional teaspoon of zest to the dough.
