- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking powder, baking soda, and salt in a bowl.
- Cream butter and sugar until fluffy, then add egg, vanilla, lemon zest, and lemon juice.
- Gradually mix dry ingredients into wet mixture until soft dough forms.
- Chill dough for 20–30 minutes for best texture.
- Scoop dough, flatten slightly, and place on baking sheet.
- Bake 10–12 minutes until edges are set but centers remain soft.
- Cool on wire rack and prepare lemon buttercream by beating all filling ingredients until fluffy.
- Sandwich cookies with buttercream or enjoy plain.
Notes
Do not overbake to maintain soft and chewy texture. Chill dough for best results.
