- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together almond flour, baking powder, and salt in a bowl.
- Beat cream cheese and butter until smooth and fluffy.
- Add powdered erythritol, egg, and vanilla; mix until fully combined.
- Mix in dry ingredients until a soft dough forms.
- Scoop dough onto baking sheet and gently flatten.
- Bake 10–12 minutes until edges are set. Cool completely.
Notes
Do not overbake; cookies firm up as they cool.
