Cinnamon Frosting
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp ground cinnamon
  • 2-3 tbsp milk adjust for desired consistency
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg, vanilla extract, and pumpkin puree. Mix until smooth.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add dry ingredients to the wet mixture and mix until combined.
  5. Drop dough by tablespoonfuls onto prepared baking sheets, spacing cookies about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely on wire racks.
  7. For the frosting: In a bowl, beat softened butter, powdered sugar, cinnamon, milk, and vanilla extract until smooth and creamy. Spread over cooled cookies.
  8. Serve immediately or store in an airtight container for up to 5 days.
