- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- Beat butter and sugars until light and fluffy.
- Mix in egg and vanilla extract.
- Add pumpkin puree and mix until smooth.
- Gradually combine dry ingredients with the pumpkin mixture to form a soft dough.
- Scoop dough onto baking sheets leaving 2 inches between cookies.
- Bake for 12–14 minutes until set but still soft.
- Cool on wire rack before serving or glazing.
Notes
Do not overbake; pumpkin cookies should remain soft and cake-like.
