Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves optional
  • 0.5 tsp ginger
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup pumpkin puree

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Beat butter and sugars until light and fluffy.
  4. Mix in egg and vanilla extract.
  5. Add pumpkin puree and mix until smooth.
  6. Gradually combine dry ingredients with the pumpkin mixture to form a soft dough.
  7. Scoop dough onto baking sheets leaving 2 inches between cookies.
  8. Bake for 12–14 minutes until set but still soft.
  9. Cool on wire rack before serving or glazing.

Notes

Do not overbake; pumpkin cookies should remain soft and cake-like.
