Ingredients
  

Cookie Batter
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tbsp cornstarch
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 2 tsp vanilla extract
  • 2 tbsp milk
  • 0.33 cup rainbow sprinkles
Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp cream or milk

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cornstarch.
  3. Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
  4. Gradually mix in dry ingredients alternating with milk until dough forms.
  5. Fold in sprinkles gently.
  6. Scoop dough onto baking sheets, flatten slightly, and add extra sprinkles.
  7. Bake 9–11 minutes until edges are set. Cool on wire racks.
  8. Beat frosting ingredients until smooth and spread onto cooled cookies if desired.

Notes

Do not overbake to maintain soft texture. Dough can be chilled if cookies spread too much.
