Ingredients
  

Peach Filling
  • 3 cups fresh peaches peeled and diced
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter
  • 1 tbsp cornstarch
Assembly
  • 10 egg roll wrappers
  • oil for frying

Equipment

  • Mixing bowls
  • Saucepan
  • Deep skillet or fryer

Method
 

  1. Cook peaches, sugars, spices, lemon juice, and butter until softened.
  2. Stir in cornstarch slurry and cook until thickened.
  3. Cool filling completely.
  4. Fill and roll egg roll wrappers, sealing edges with water.
  5. Fry at 350°F until golden and crisp.

Notes

Best served warm with ice cream or whipped cream.
